Creamy Broccolini and Prosciutto with Wagon Wheels

Ingredients

1 pkt San Remo Wagon Wheels

200g prosciutto, sliced thinly, cut into thin strips

2 bunches of broccolini, chopped finely

1cup spring onions, chopped finely

¼ cup chives, chopped finely

1 ½ cups of thickened cream

1 cup parmesan

3tbsp olive oil

Salt n pepper

Method

  1. Cook pasta as per packet directions.
  2. Heat olive oil in a large frying pan on medium heat.
  3. Add prosciutto to pan and cook for 2/3mins or until crispy.
  4. Next add spring onions & cook for 2mins.
  5. Place broccolini into pan and cook for further 2mins until tender.
  6. Pour cream into pan and bring to the boil and add half of the parmesan. Simmer for 3mins or until sauce coats the back of the spoon.
  7. Strain pasta and add the pan.
  8. Add chives and mix well. Add salt n pepper to taste.
  9. Serve into 4 bowls and garnish with remaining parmesan.
