Monday night Chicken Carbonara with Linguine

Ingredients

1pkt San Remo Linguine

250g bacon, finely chopped

1 cup of Sunday night, Roast chicken

1tbspn olive oil

1tbspn butter

¼ cup of parmesan, grated

¼ cup of pecorino, grated

1 egg, plus another 3 yolks (4 eggs)

Salt and cracked pepper

Method

Cook pasta as per packet directions.

Heat a pan on medium heat.

Add oil, butter & bacon. Cook for 3 to 5mins or until bacon starts to brown.

Add chicken to pan and cook for 2mins.

Put eggs, pecorino, parmesan and mix.

Season with salt and pepper.

Strain pasta, place into the pan and add egg mix to the pasta immediately.

Serve with a generous amount of cracked pepper over the top.
